🥙 Oil-Free Artichoke Spread (Perfect for Wraps & Sandwiches)

This creamy, savory oil-free artichoke spread is one of my favorite go-to staples for wraps, sandwiches, pitas, and veggie platters. It’s quick to make, protein-rich, and made entirely from whole plant foods — no mayo, no oil, no fuss.

I love this spread stuffed into a wrap with tomatoes, cucumbers, greens, and sprouts, or used as a hearty sandwich spread when you want something satisfying but light.

Prep time: 10 minutes

Makes: about 3 cups

Ingredients:
2 cans (14 oz each) artichoke hearts in water, drained and rinsed
1 can (15 oz) white beans, drained and rinsed
4 tablespoons fresh lemon juice
2 cloves garlic
4 scallions (green onions), chopped
1 tablespoon soy sauce or low-sodium soy sauce
½ teaspoon ground red pepper (adjust to taste)

Instructions:
Add all ingredients to a food processor and blend until smooth and creamy.
Taste and adjust lemon, garlic, or spice as needed.
