Ingredients
● 1 (15-oz) can chickpeas, drained and rinsed
● 1 (15-oz) can black beans, drained and rinsed
● 11⁄2 cups chickpea flour
● 1⁄2 red onion, diced
● 2 large cloves garlic
● 1⁄2 cup chopped parsley
● 1⁄2 cup chopped cilantro
● 2 teaspoons ground cumin
● 2 teaspoons ground coriander
● 2 teaspoons lemon juice
● 1 tablespoon tomato paste
● 1⁄2 teaspoon turmeric
● 1⁄4 teaspoon red pepper flakes (add more or less depending on heat preference)
● 1⁄8 teaspoon ground black pepper
Instructions:
Add all ingredients to a food processor.
Pulse until the mixture is fully combined but still has some texture.
○ It should look and feel like thick, textured hummus.
○ If needed, add 1 tablespoon water to help it come together.Using a spoon and your hands, form falafel patties using 1 to 2 tablespoons of mixture per
patty.
○ Smaller patties cook more evenly and hold together better.Place falafel in a single layer in the air fryer.
Air fry at 375°F for 8 minutes, flip carefully, then cook for 5 more minutes.
○ Keep an eye on them — air fryers vary.Falafel should be lightly browned, firm outside, and soft inside.
How I Serve Them
● In wraps or pita-style meals
● Over romaine with tomatoes, herbs, and hummus
● With soup or a fresh cucumber salad
Creamy Plant-Based Tzatziki (Grated Cucumber Version):
This is the cooling, creamy sauce I paired with the falafel. It’s made with plant-based yogurt and grated
cucumber for a classic tzatziki-style texture — no oil, simple, and fresh.
Ingredients
● 1 cup unsweetened plant-based yogurt
● 1⁄2 cup cucumber, grated and lightly squeezed to remove excess water
● 1 tablespoon lemon juice
● 1 small clove garlic, finely minced or grated
● 1–2 tablespoons fresh dill or parsley (optional but great)
● Fresh ground black pepper, to taste
(No oil, no added salt)
Instructions
Grate cucumber and gently squeeze out excess liquid.
In a bowl, stir together yogurt, cucumber, lemon juice, garlic, and herbs.
Add black pepper to taste.
Chill for 10–15 minutes if you have time — flavors get even better.
